Alex Chen – Canadian Culinary Championships – Gold Medal Winner

 

Chef Alex Chen wins GoldWe start in Vancouver at the Boulevard Restaurant at The Sutton Place Hotel with Gold Medal Winning Chef Alex Chen.

He’ll be answering the question – How did he do it?  How did he beat the very best chefs in Canada in the Canadian Culinary Championships.

He’s a totally engaging and passionate guest, very much like his cooking.

Alex  was one of 11 chefs who won Gold Medal Plates regional competitions held across the country in 2017 to earn the right to compete in the national championships, which began with a Mystery Wine pairing event on Friday night and continued Saturday with a Black Box competition that allowed chefs just one hour to prepare a dish using seven mystery ingredients.

The two events culminated in Saturday night’s grand finale, where Chen prepared the same signature Parfait of Wild BC Shellfish, ‘Chowder’, Northern Divine Caviar and Bull Kelp ‘Brioche’ — paired with Sea Star Estate Farm and Vineyards’ 2016 Ortega from Pender Island, BC — that earned him top spot at the Gold Medal Plates regional competition in Victoria, BC last October.

Susana Trilling – Seasons of my Heart  –  Oaxaca, Mexico

 

SusanaTrillingOaxaca (Wha-haka) is the home of traditional Mexican cooking. It’s also the epicenter of Mescal and Mole Sauces.

How lucky was I to find a place to sit in the shade in a small courtyard and see her sign right in front of me?

Surely,  here was a perfect guest for the show. A chef and author who discovered the historic centre of true Mexican cooking and never left. Teaching and advocating as she went.

Susana Trilling is a chef, teacher, caterer, author, TV hostess, food consultant and director of Seasons of My Heart Cooking School and Sazon de Mi Corazon S.A. de C.V., producing gourmet Mexican products.

She owned 2 NYC restaurants, a restaurant in Fremantle, Western Australia and has lived in Oaxaca since 1988, where her two sons were born and raised on her ranch outside of the city.

She wrote My Search for the Seventh Mole and Seasons of My Heart; A Culinary Journey through Oaxaca, Mexico to accompany her 13 part PBS series, that ran for 6 years.

 

A renowned authority on Oaxacan cuisine, Susana has filmed and hosted numerous TV programs in addition to her own series including: Two Hot Tamales, MexicoOne Plate at a Time with Rick Bayless A Cooks Tour with Chef Anthony Bourdain, Andrew Zimmern’s  Bizarre FoodsThe Diary of a Foodie, and Jeff Corwin’s series Extreme Cuisine.

 

. She was awarded a Lifetime Achievement Award at the Oaxacan International Food and Wine Festival in 2002 and in 2012 was presented with the Espiga de Oro Award for her work promoting Oaxacan cuisine internationally. She has been featured at many Food and Wine and Cacao Festivals and been a celebrity chef at CIA San Antonio’s annual Paella Challenge.

Susana’s company, Sazon de mi Corazon, SA de CV produces the Seasons of My Heart line of gourmet Mexican food products available internationally in both retail and food service presentations.

She is a member of Slow Food, IACP, The Mexican Mycology Association and is currently promoting her newest book, titled  FromMilpa Seed to Salsa, written in collaboration with CEDICAM and others about rural Mixtecan farmers in Oaxaca, their system of growing organically and sustainably and the recipes that result.

We won’t ever see a lot of Mexican wines in Canada. A basic fact of life there is that Tequila has the inside political track and the Government’s attention. Not surprisingly, the Mexican government makes it almost impossible to export or even carry their wines back home with you.

It’s a damn shame because their wines are getting so much better as young winemakers learn their craft in the USA and then return to bring change to the wines back home.

I was delighted to find La Contra open for business and selling only small independent local and regional wines with Ensenada and the Guadalupe Valley leading the way.

Alison Moyes  – Winemaker.  Liquidity Wines (OK Falls)  Wins Gold at Chardonnay du Monde

Liquidity Wines estate-grown 2016 Chardonnay Reserve has been listed as the number one wine in the Top 10 Chardonnays to receive Gold medals at the recent 2018 Chardonnay du Monde Awards.

The Awards recognize the world’s best Chardonnays as evaluated by a panel comprised of 300 international experts. This year, 679 wines from 39 countries were tasted by the judges.

Liquidity’s award-winning 2016 Chardonnay Reserve features layered aromas of toasted almond, pear and peach with a subtle whisper of allspice. Complex yet well-balanced, the wine captures flavours of lime zest, pineapple, lemon curd and intense minerality, and leaves a lingering finish on the palate. The wine will be available for purchase in April to Liquidity’s Equity Tasting Club members, followed by Club Liquidity members ($42, plus tax); it will also be available in the winery tasting room in July (while supplies last).

Originally from Southern Ontario, Alison moved to Halifax  to attend Dalhousie University and pursue an interest in science, studying Microbiology. During this time, she had the opportunity to work at some of Halifax’s finest restaurants. As her palate developed, she began to consider a career in winemaking and acquired a degree in Oenology & Viticulture from Brock University.

Following several seasons working in the Niagara region, the Okanagan beckoned. Alison brings experience from two top wineries in the Okanagan, having worked under Pascal Madevon at Osoyoos Larose and as Winemaker for Stoneboat Vineyards for five years.

The big surprise is that although she obviously can craft a world class Chardonnay, Alison at heart is a 100% Pinot Head.

When the Chard runs out,  as it certainly will, I urge you to taste the Pinot Noirs.

And the Viognier and Pinot Gris.  OK… just try everything!

A mix of Irish artists and the music fans of Dublin welcoming World heroes.

In honour of St. Patrick’s Day, TDM takes us for a wee dram of whiskey at the legendary Palace Pub in Dublin! We’ll explore the fascinating history of Irish Whiskey with Michael Lawlor, head of Irish Whiskey Tours. He’ll tell us about the differences between Irish and Scotch whiskeys. Michael will also suggest some great food pairings when enjoying a dram.
Plus, we’ll talk to Michael Reddy of the Teeling Whiskey Company and Willie Ahern of The Palace Pub. They’ll tell us about new wave of Irish Whiskey aficionados in Dublin. And how pubs like the Palace are moving to establish their own house brands of Whiskey. Plus, we’ll hear about how they celebrate St. Patrick’s Day in Dublin.

How better to celebrate St Patrick’s Day than presenting A One hour special from our  2 weeks in Ireland.

 

 

We start our tour  in the South of Ireland..through Clonakilty, Cork and we end on the historic streets of Dublin.

Guests include Connor Higgins,   Michael Lawlor (Irish Whiskey Tours), Michael Reddy (Teeling Whiskey) and Willie Ahearn from The Palace Pub on Fleet St.

 Even though the address says Ring Village..I drove this part of the coast a dozen times..never really saw a village..a gathering of various houses yes but a village..not so much.

Crumbling ancient buildings and stone walls – yup!

A strong sense of history on this part of the road..you can see what attracted people even 3-500 years ago.

And there, surrounded by the ocean and a small fishing fleet stands Deasy’s.

It came highly recommended by the locals.

The trick was getting there early enough for one of 6 parking spots just off the highway (its on a nasty little corner) and gets busy very quickly.

The reason – the amazing cooking talents of Caitlin Ruth – The Chef.

Originally from the USA, she married an Irishman and found her way back to the homeland from Belgium.

What a fine fine chef she is..

The menu features – as expected – many different fish, in many exceptional dishes. Paired with a very smart wine list.

It used to be an old pub..so it still has that comfortable pub feel but the windows give everyone a brilliant look at the ocean just across the highway.

Then it’s off to  Cork City… South of Dublin on the West Coast of Ireland.

 It’s the home of Café Paradiso, one of the best vegetarian restaurants anywhere.

It’s also the home of Chef Denis Cotter.  Except for a pal Sharon Kelly, Denis is the only person  I know in all of Ireland.

We had met at Hastings House on Salt Spring Island several years ago. He was cooking recipes from his award winning book For the Love of Food.

Denis’ frustration with the limitations of the vegetarian industry sparked the opening of Cafe Paradiso in 1993, to create an environment where he could evolve a personal style of cooking focused on the pleasure of food rather than the perceived negativity of vegetarianism.

Among the many awards bestowed on Cafe Paradiso, Denis Cotter was named “Chef of the Year” by the Irish magazine ‘Food & Wine’ in 2005, and “Best Chef in Cork” by the Restaurant Association of Ireland in 2009. Cafe Paradiso is listed as an icon in the “Bridgestone 100 Best Places to Eat in Ireland” guidebook. It was voted ‘Best Restaurant in Munster’ by the readers of ‘Food & Wine’ magazine in 2001, and the restaurant was also voted ‘Restaurant of the Year’ by Les Routiers Ireland in 2004.

Denis Cotter is the author of four cookbooks.  Each has received critical acclaim, shortlist nominations and industry awards, including ‘best vegetarian cookbook in the world’ for the second volume, Paradiso Seasons.

Darina is the most famous cook in Ireland.

 

She has starred in her own RTE TV cooking shows, published 10 books starting with the Simply Delicious series, and received a dozen awards and prizes.

Her most recent prize was the 2013 Cookbook of the Year award at the Irish Book Awards  for her 30 Years at Ballymaloe: A Celebration of the World-Renowned Cookery School.

Ms Allen has been growing unusual food at Ballymaloe, Co Cork, for 40-odd years. Her 100-acre farm, with its acre of greenhouses, probably delivers a more diverse range of crops than any farm in Ireland. But the farm has produced something more spectacular than food: the world-famous Ballymaloe Cooking School which invites the world’s top chefs to its doors and its classrooms, and sends out successive waves of alumni to run restaurants all over the World.

 

A tireless ambassador for Irish food both at home and abroad, Darina has been instrumental in setting up the Farmers’ Market Movement in Ireland. Slow Food is a passion for her, and she is the councilor for Ireland in the Slow Food Movement and President of East Cork Convivium of Slow Food. Through the East Cork Educational Fund, she runs a programme for local primary schools to help local children learn about food from garden to plate.

L Mulligan Grocer has been on the Dublin scene for the past few years and has been quietly building a great reputation as a pub. Worth going quite off the beaten track for. It is located in Stoneybatter, a residential area about 20 minutes walk west from Dublin city’s main tourist drag of Temple Bar. It provides thoughtful, well sourced gastropub food, and is possibly the only pub in Dublin that does not sell Guinness. A bold move, justified by its focus on small, high quality craft beers from Ireland and abroad.

 Catherine Cleary – Food Journalist for The Irish Times

Catherine went from working the crime beat to the culinary arts. Or as she says

“I went from Murder to Meringue”

There’s been such an improvement in Irish food over the past 20 years that it falls on someone to tell their stories.

That someone is Catherine Cleary.

Catherine Cleary is an award-winning journalist. She began her career as a news reporter with The Irish Times and became the paper’s drugs and crime correspondent. She later joined the Sunday Tribune as its security correspondent. She began writing about food almost a decade ago and now writes a weekly restaurant column for The Irish Times.

John McKenna was born in Belfast and first qualified as a Barrister at Law. In addition to his legal work, John worked as a journalist in Dublin, writing particularly for Hot Press and In Dublin Magazine.

It’s fair to say we stumbled onto a small corner lunch place called Oxmantown..where owner Conor Higgins was holding court.

Oxmantown? At the time of the Norman invasion into Ireland, the Vikings, or Ostmen (East-men), as they called themselves were exiled to the north of the River Liffey where they founded the hamlet of Austmanna-tún, later corrupted to Oxmantown. The district remained distinct from Dublin city for many centuries. Oxmantown celebrates this cultural distinction, its location in the heart of the homestead of the Ostmen.

Conor Higgins is the chef/owner at Oxmantown. Ex of Junior’s and l’Gueuleton – two of Dublin’s most lauded and successful eateries of the past decade – his provenance is distinguished. Applying classic culinary techniques to the art of sandwich making, with Oxmantown, Conor brings something unique to Dublin’s burgeoning café scene.

The line-up was all the way to the door and out..and a rather bizarre mix of lawyers and judges from the law courts  and farmers from the market around the corner.

You could tell at a glance that this place was very popular and as soon as we stepped inside..you knew they were on to something..

Great small menu… mostly well made and very  inventive sandwiches, salads etc.

Out came the microphone and recorder and in between orders etc, Conner gave us the story… (everyone here has a story)

 Then it’s a brisk 15 minute walk through Temple Bar (former site of original Viking settlement)..to Fleet Street and  the home of one of Dublin’s historic pubs..The Palace Bar, established 1823.

 

 

The Aherne family bought the Palace in 1946..and have run it ever since.

Its right around the corner from the Irish Times newspaper offices..thus many many columns have been written in its corners and nooks.

I don’t think you can do a food and beverage tour of Ireland and not talk about Irish Whiskey.

Its fallen on some hard times, given the economy, but its making a wonderful comeback today.

I wanted to know from Michael… how their whiskey business made its comeback and why its so different from their Scottish neighbours.

We also talk trends..in craft brewing sand cider making.

Michael gives us a brief history of The Palace Bar, which was  the first bar to bring back the tradition of making in house whiskey.

Mulligan Stew March 3rd 2018- John Mann

A couple of weeks ago Jim Byrnes and I visited John Mann in his special care residence in Yaletown.

His shape and form are the same but his memory has departed. If he recognized us I didn’t see it.

Our memory of John is/was of a dynamic, brilliant human. The kind of man who you instantly wanted as a best friend.

John was lead singer and co-writer for Spirit of the West. He was a wonderful actor. (we shared an agent)

He raised funds for an African village. If money was being raised for a friend..John was always there.

If there was a movement he identified with – he lent his name and music.

Sounds too good to be true?  Believe me, that was his life.

Well, that and his family.  His wife and love and partner is  Jill Daum.  They have two children.

John has battled Cancer and now early onset Alzheimer.  All his friends have stood behind John and Jill with love and compassion.

They’ve gathered in Toronto and now Vancouver.

Nov 11 we all gathered at The Commodore Ballroom.

It was one of the very best nights any of us could remember. Everyone on the guest list below sang and played.

John danced his way across the stage and back again but only once did he speak into a microphone. He said “this is fun”


For over 30 years they left their mark and became one of Canada’s most popular bands..even though they weren’t churning out pop hits.
They were a wicked combination of punk, folk, Celtic and roots.
Over the past number of years John Mann, lead singer and co-founder succumbed to early on-set Alzheimer’s. It robbed him of his memory but not his strength and drive.
It was my pleasure to host the evening, more like a traffic cop, as bodies were flying in and out.
Listen..it’s hard to watch your friend disappear but we all CAN do something. There’s a Go Fund me page for John Mann. $41,000 has been raised so far for his support and care. The goal is $50,000.  Please help if you can

Well, you get a conversation filled with behind-the-scenes stories from decades-long careers in music journalism. Nardwuar and TDM, both Much Music VJ alumni, grill each other about their career highs and lows.
In this episode, we get the backstory on how Nardwuar met Snoop Dogg, scored his first interview with Nirvana, and that time he snagged Drake’s cell number at a concert. Then, Nardwuar takes over as interviewer to find out more about that time TDM was spit on while on TV, getting the blow-off from Ian Tyson, and a regrettable moment during his gig emceeing a Doors concert in Vancouver.
